The Great Green Wall

Finally, you can add a dash of green to your vanilla life!

Presenting the Great Green Wall, otherwise known as the Pandan Chiffon Cake;

try it today, and you will leave others green with envy!

Okay, before I get too carried away sounding super corny (Don't shoot me, for I love corn!), let me get back to the cake. I took the recipe off this website: Lily Ng; she has many recipes of Asian delicacies that I am dying to try.

There were two difference from her recipe. Firstly, I could not find cream of tartar, and I read online that I could use the same amount of white vinegar to substitute for it. It worked! The egg white was nice, fluffy and whisked to stiff peak. The second point I wanted to raise is that I did not have any pandan juice, so I simply used the 1 tablespoon of pandan paste instead.

The Husby assisted me in baking the cake... Hmm... I should rephrase it: I was the brain and he was the hands! Haha... So technically speaking, he baked the cake! We think it was a success, it seemed to taste like Pandan Cake. I'm very proud of our teamwork! =) Strangely enough, I cannot remember how the cake should taste like! It is certainly something that I cannot find here in Baltimore, so there is nothing to compare too. Never mind lah, you can take my word for it that the cake tasted all right!

I do not think we will bake this cake often, as coconut milk as one of its main ingredients. Subconsciously I will try to avoid recipes that call for coconut milk, whipping cream, sour cream or heavy cream. Just the sound of it reminds me of how fattening it may be!

Here is an interesting fact I discovered while researching on the pandan cake - pandan leaves are known as the screwpine leaves. If only I had green fingers, I would definitely love to grow some of it in my garden - when I get the garden! And yes, along with some of that corn too! ;)

I'll leave you with another photo of the cake; somehow it is difficult to get the right green color on the photos. One problem could be that I took these photos at night as I was dying to sink my teeth into them, and the lighting was not as pretty as when there is sunlight.
