The weather was cooler (24 C) and I took the opportunity to bake these tarts since I have already made the pineapple jam ages ago. The tarts are not perfect as I was hurrying to get them into the oven so I could save some money for the gas bill, but Shh... only you and I know that they are not even or too flat yah?
It looks easy to bake these tarts, and the truth is, it is! I had fun stamping out the dough and adding the pineapple jam to it; took me two hours in all for some 80 tarts this round. While adding the jam to the tart, I was quite engrossed in it that for that moment, I lost track of where I was. I could have been back in Singapore for all I know! Alas, the screeching sirens brought me back to Baltimorean reality.
This time I used the recipe found here, it turned out pretty good. Maybe I will stick to this recipe, but if you have a better one, please share!
Roll, roll, stamp stamp stamp away - empty tarts seeking pineapple jam to complete their lives.
Unbaked tarts versus the baked tarts. The Husby says they look like they are lining up to go to war, haha...
