If you guessed that the previous photo was of a sprouting red potato, you are spot on! I have never seen the sprouts of a red potato before, and the sprouts remind me of corals. Pretty eh?
We kept the potatoes in a dark cupboard, but somehow they still managed to sprout. I think there was some moisture in the plastic bags that the potatoes were kept in. But worry not if the potatoes sprout, they can still be eaten!
The only time when you should throw them away is when they have a greenish tinged skin- It is toxic, I repeat, do not eat it! This happens when the potatoes are exposed to light. Of course if you desperately need that slightly greenish looking potato, you can try to thickly peel away the skin and cook it.
One silly thing that I can foresee myself doing if I had not read a potato cookbook is to store the potatoes in the fridge. Why not right? Its a cool, dark place! That is a bad idea, unless of course you like the taste of carmarlised potato. Storing potatoes in the fridge converts their starch to sugar, and when cooked will taste different from regular potatoes.
There are quite a number of great dishes you can make with potatoes, and I love tuna potato patties, mashed potatoes, hash brown, rosti, baked potatoes! I found out that you can even make potato scones and bread! Can someone tell me though, what is the difference between hash brown and rosti? One is thicker than the other?
I would certainly like to grow my own potatoes! Maybe I should water the sprouting ones to see what happens to them; it would be called Project potato!
