I am currently cooking shredded pineapple for the second round of pineapple tart making. The first round was last weekend, and all of it was gone by Wednesday. There is a pineapple tart monster in this house I say! And so after picking up five cans of shredded pineapple from Safeway this evening (glad it was shredded so that saved lots of time!) and dumping all of them into the pot, I have been watching it for the last three hours which may jolly well stretch into the next hour. That seems like forever to me, but when I think of the Husby and the many times he has woken up early to bake pancakes for me, this is nothing. Warm fluffy pancakes from scratch, how can I beat that?
Having said that, it is a holiday here tomorrow and I am definitely looking forward to pancakes for brunch! :)
Either than baking more tarts, I am also looking into three craft projects to keep myself busy. More magnets, cuff links, and painting wood. To me, it feels strange to be idle, sometimes I wonder what is wrong with me. At least that will keep my mind off many things especially what lies ahead this year which are way beyond my control and making me fret a little. Just a little for now. But as usual I conceded that is the way life is, some good, some bad, depends on what I want to make out of it.
What is even more freaky to me is how I can easily morph into Bridezilla. Search for the ideal dresses, shoes and all. It is easy to lose track of the budget, and much worse, the fact that this is only for a day while we still have our whole lives ahead. So for now, let me go back to cooking my pineapple rather than surfing and ogling at wedding stuff which are beyond my means, and remind myself that it is about the Husby and me. And practise my favourite quote : live well, laugh often and love much. ;)

Wise words - you're already married, and you guys love each other well. The ceremony is just that :)
PS I'm super impressed you're making the pineapple filling from scratch too!
I cheated, its canned! :) If I could buy it that would be so great, save more time and the hassle of cooking it.
I have not tried it but i believe the pineapple tart filling could be microwaved (with occasional stirring).
wow where do u find so much time and energy to do all these things my dear! i'm impressed!
